Ruth’s Keto Thanksgiving Leftover Casserole

Ingredients

  • 10 Eggs, whisked
  • 1 Bell pepper
  • ½ Onion
  • 1 Cup leftover cooked turkey meat
  • ½ Cup leftover cooked ham meat (optional diced slices)
  • 1 Cup leftover vegetables (add chopped broccoli if needed)
  • 1 Can unsweetened coconut milk
  • 1 tsp Italian mixed herbs
  • Salt and pepper to taste

Directions:

Step 1: Use a little oil to wipe your Crock Pot.

Step 2: Whisk the eggs in a bowl with the coconut milk and seasoning and put to the side.

Step 3: Combine the rest of your ingredients and place them in the Crock Pot. Evenly distribute the egg mixture over the mixture and put the lid on.

Step 4: Cook on high for 3 hours or low for 6 hours. Once cooked, remove the egg bake, and leave to rest. Serve and enjoy.
