Ruth’s simple, yet delicious turmeric cauliflower fritters are a hit with the whole family. These crispy snacks are great for a light lunch or afternoon snack. Happy hour at home never tasted so good. Serve with a mayonnaise, natural yogurt or even a tomato sauce and you are good to go!
Ingredients
- 2 ½ cups grated cauliflower
- 1 Tbsp coconut flour
- ¼ cup almond flour
- 1 tsp ground turmeric
- 1 tsp ground coriander
- ½ onion
- 1 clove of garlic
- 2 eggs, beaten
- Salt and Pepper
- 2 tbsp Coconut oil, for frying
Directions:
Step 1: Put the grated cauliflower into a large bowl. Add the coconut and almond flour, turmeric and coriander and stir the ingredients all together until they are well combined.
Step 2: Grate the onion and crush the garlic. Add this to the bowl and stir.
Step 3: Add the beaten eggs and salt and pepper (to taste) and stir till all the ingredients have started to bind together.
Step 4: Heat the oil in a pan. Using a ¼ cup, scoop the mixture and place in the oil. After a minute or so flip the fritter and cook the other side. Cook until both sides are golden.
Step 5: Serve immediately with a dip of your choice.
