I’m sure you’re reading this recipe thinking, “How is this possible?” But contrary to how it may appear these simple 3 ingredient pancakes actually taste delicious and are free of the 2 main inflammatory ingredients within traditional pancakes- sugar & flour. Leaving out these two ingredients make this breakfast treat extremely friendly on the digestive system.

Ingredients:

  • 2 bananas
  • 4 eggs
  • ½ teaspoon cinnamon
  • (1 tablespoon of avocado oil, for frying)

Directions:

Step 1: Add all ingredients to a mixing bowl.

Step 2: Mash bananas until they are soft and creamy. Add in the 4 eggs and cinnamon. Mix until well combined. Use an immersion blender if you like the batter extremely smooth.

Step 3: Add avocado oil to a fry pan and bring to high heat. Add small scoops of batter to the pan and allow to cook until small air bubbles start to form, then flip.

Serving:

Enjoy with grass fed butter and antioxidant boosting fruit such as blueberries.

Pro tip: Top with a spread of creamy all-natural peanut butter for extra protein.
